Celeriac remoulade

Scrape outer skin of celeriac.

Grate raw, mix with parsley or coriander, mayonnaise, horseradish, sour cream, lemon juice. Season to taste.

[Works fine without the sour cream.]

Serve as an accompaniment to smoked salmon.

Can add grated raw potato then fry as rösti – but presumably without the mayonnaise etc!
