Sausages and sweet potatoes

Adapted from Rukmini Iyer’s recipe in The Roasting Tin.

Use enough sausages and sweet potatoes for the number of people you have. Peel and chop the sweet potatoes. and arrange in a roasting tin with the sausages and some whole cloves of garlic, peeled. The recipe adds red onions chopped into eighths but we don’t like those. Sprinkle with smoked paprika, salt and pepper and drizzle with olive oil; toss and then cook at 200°C for 45 to 50 minutes.
